June 2016 - Mediterranean Pizza with Peppercorn Chevre

INGREDIENTS:

  • 12 sun-dried tomatoes dry or in oil, drained
  • 12 oz. peppercorn goat cheese, sliced as thinly as possible
  • 1 recipe basic pizza dough or store-bought pizza crust
  • 2 Tbsp capers in brine or salt, rinsed
  • 10 fresh basil leaves
  • Salt and freshly ground black pepper
  • 4 Tbsp olive oil

  1. Preheat oven to 250 degrees for at least 20 minutes before baking the pizza.
  2. Place the tomatoes in a small bowl, cover with hot water, and leave to soak for 15 minutes. Drain and cut into thin slices.
  3. Arrange the cheese on the prepared pizza dough in one layer, leaving the rim uncovered.
  4. Dot with the tomato slices.
  5. Sprinkle with the capers and basil leaves.
  6. Allow to rise for 10 minutes before baking.
  7. Sprinkle with salt, pepper and olive oil.
  8. Place the pizza in the oven. Bake for about 15-20 minutes, or until the crust is golden brown.
